Black Bean Soup
Best recipe in the 9-to12-year-old category, and best recipe overall in the 2009 Stokes 40H Nutrition Fair, by Maya Burgess.
1 tablespoon olive oil
1 small sweet onion, diced
1 teaspoon minced garlic
1 envelope onion soup mix
1 large jar Southwest salsa (mild)
6 cans black beans (undrained)
1 teaspoon Cajun creole seasoning
Sour cream, for garnish
Saute onion and garlic in oil in a pan. Place onion and garlic along with all other ingredients in a Crockpot. Cook on low at least 3 hours.
2. Top each bowl with a dollop of sour cream when serving. Also delicious served over brown rice.
Makes 12 servings.
