Baby carrots were born from farmer's big idea

■ You know those cute baby carrots? They are not babies, just pieces of peeled big carrots. But there's a neat "lemons into lemonade" story behind them.

The tale goes as follows. California farmer Mike Yurosek (who is credited with creating the original baby carrot branded "Bunny-Luv") was unhappy at having to discard the majority of his carrot crop because rotten spots and imperfections made them unsuitable to sell for human consumption (animals were less picky).

So, he came up with the idea of cutting full-size carrots with imperfections into small peeled segments, perfectly sized for ready-to-eat snacks.

The convenience of these carrots made them enormously popular, even though they were much more expensive than whole carrots.

Not only did Yurosek cash in, but he did his part to help create a healthier nation.

Baby carrots have dramatically increased carrot consumption.
